Picture this. You are hungry and dig into a Baja-style mahi mahi fish taco. Only this fish does not come from the sea, but a food production facility with large stainless-steel containers much like those found in a microbrewery. Growing inside these containers are isolated fish cells that exponentially multiply and are then formed together to create products that look, feel and taste like seafood — because that’s exactly what they are.
